- 8 cups Becky D's gluten-free bread crumbs
- ½ cup olive oil
- ½ cup onion, finely chopped
- ½ cup celery, finely chopped
- 2 teaspoons savoury seasoning
- ¼ teaspoon salt (or more, to taste)
- ¼ teaspoon pepper (or more, to taste)
- ¼-1 cup broth (chicken or vegetable, your choice!)
Directions:
- Start with Becky D's sandwich bread: cut it into small chunks and leave it out overnight to dry. Pro Tip: Use bread heels and scraps stored in the freezer throughout the year.
- Sauté onions and celery with 2 Tbsp of olive oil in a large fry pan over medium heat until they're soft and fragrant.
- In a large bowl, mix together bread crumbs, savoury seasoning, sautéed onions, celery, and ¼ cup of olive oil.
- Gradually add ¼ cup of broth (adding more as needed) until you can form the bread into balls.
- Add the remaining olive oil to the fry pan. When it's hot, add the bread mixture and brown over medium heat, stirring occasionally.
